Pineapple Chutney

This very beautiful and tasty dish would be a wonderful accompaniment to many dishes, especially Indian ones such as curries. This can be prepared and refrigerated in sterilized jars for up to 2 weeks.

Ingredients
- 2 cups diced fresh pineapple
- 1/2 cup rice wine vinegar
- 1/2 cup small-diced red onion
- 1/4 cup small-diced red bell pepper
- 2 tbsp honey
- 1 1/2 tbsp minced jalapeno pepper
- 1 1/2 tbsp minced fresh gingerroot
- 1 tbsp lime juice
- 1 tsp minced garlic
- 1 tsp turmeric
- 1/8 tsp ground cloves
- 1/2 cinnamon stick
Preparation
Step 1
In a large nonstick, nonreactive saucepan, combine all the ingredients. Bring to a boil, reduce the heat, and simmer, covered, for 1 hour. Cool to room temperature before serving or storing in the refrigerator.
