  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup milk
  • 1 1/4 cup flaked coconut



Step 1

In a mixing bowl, cream butter and sugar. Add eggs; one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Stir in coconut.

Pour into a greased 9X5 pan. Bake at 350 degrees for 1 hour. Cool for 10 minutes before removing from pan. Cool on wire rack.
