Double Cherry Cheesecake

Ingredients

  • 1 pkg Cherry Supreme Cake Mix
  • 2 tbsp oil
  • 2 8-oz pkgs softened cream cheese
  • 1/2 cup sugar
  • 4 eggs
  • 1 1/2 cups milk
  • 2 tbsp lemon juice
  • 1/2 tsp almond extract
  • 1 can cherry pie filling (optional)

Preparation

Step 1

Heat oven to 350 degrees.

Reserve 1 cup dry cake mix. In a large mixing bowl, combine remaining cake mix, 1 egg and oil. Press crust evenly into the bottom and 3/4 of the the way up the sides of a greased 13 x 9" pan. In the same bowl, blend cream cheese and sugar together. Add 3 eggs and reserved cake mix. Beat 1 minute at medium speed. At low speed add milk and flavoring. Pour into the crust. Bake at 350 degrees for 1 hour and 15 minutes until center is firm. Once cooled, top with pie filling and serve.
