Tofu and Miso Dressing

This is a delightful dressing for mixed greens. It can be kept refrigerated for up to 1 week.

Ingredients

  • 1 cup soft tofu
  • 3 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp mellow white miso
  • 1 tbsp sake
  • 1 tbsp honey
  • 1 tbsp poppy seeds (optional)

Preparation

Step 1

In a blender, combine the tofu, lemon juice, mustard, miso, sake, and honey and puree until smooth. Add the optional poppy seeds and stir to combine.
