McCafferty's Irish Soda Bread

  • 3 c flour
  • 1 tsp salt
  • 2 1/2 tsp xantham guum
  • 1/2 c sugar
  • 3 scant tsp baking powder
  • pinch of baking soda
  • 1/4 lb soft butter
  • 1 c raisins
  • 1/2 c currants
  • 2 eggs
  • 16 oz. buttermilk
  • handful of carraway seeds

Preparation

Step 1

sift together in a large bowl the flour, salt, sugar, baking powder and baking soda. Work in the soft butter or margarine until a crumb mixture is formed.

Beat the eggs until light. Stir the fruit and seeds into the crumb mixture, then add the eggs and buttermilt. This will be a thick batter.

Grease a large round pan (7" bottom, 8 1/2" across top and 2 1/2" deep). Turn the batter into the pan and bake at 325* about 60-65 minutes or until the bread is nicely browned and tests done.

After removing from the oven, brush with a glaze made frome 1 T sugar, melted butter and milk.
