Ingredients
- 4 slices bacon
- 4 med. potatoes
- 1/4 c. chopped onion
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 tbsp. butter
- 1/2 c. shredded cheddar or monterey jack
Preparation
Step 1
In a skillet, cook bacon till crisp. Drain; crumble; set aside.
Tear off a 36x18 piece of heavy foil. Fold in half to make an 18" square. Fold up sides, forming pouch. Slice potatoes and place in pouch; add onion. Sprinkle w/ s&p. Dot with butter. Fold edges of foil to seal pouch securely, leaving space for steam to expand.
Grill over med. coals 35-40 mins. or till done, turning over several times. Carefully open pouch. Sprinkle potatoes w/ crumbled bacon and cheese. Close pouch and let stand 3-4 mins. or till cheese is melted.
