VEGETABLES - Potato Cakes

Ingredients

  • 2 c mashed potatoes
  • 2 tbsp butter
  • 2 egg, beaten
  • 3/4 cup all-purpose flour
  • 3 tsp baking powder
  • 1/4 salt
  • 1/4 tsp nutmeg

Preparation

Step 1

Mix mashed potatoes, butter and eggs and beat until light. Sift dry ingredients. Gradually add to potato mixture until combined. Knead lightly on a floured board. Roll to 1/4 inch thickness and slice into wedges. Over medium heat, fry on a lightly oiled griddle until golden and slightly puffed. This will take about 5 minutes per side. Serve hot buttered cakes with soup or a salad and cheese.
