  • 1 1/3 C flour
  • 2/3 C WW flour
  • 2/3 C sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 egg white
  • 1/2 C unsweetened applesauce
  • 1/2 C FF milk
  • 3 T melted butter
  • 1 C fresh or frozen blueberries
  • 2 tsp grated lemon peel
  • -------
  • Glaze
  • 1/3 C powdered sugar
  • 2 T lemon juice

Preparation

Step 1

1. In bowl combine dry ningredients
2. Combine eggs,applesauce, milk, butter; add dry ingredients just till moistened
3. Fold in blueberries and lemon peel.
4. Pour into sprayed pan; bake at 350 for 60 - 65 min till pick clean
5. Combine glaze ingredients; our over warm loaf; cool 10 min before removing from pan
