Ingredients
- 1 1/2 lbs. broccoli
- 1/4 cup olive oil
- 1 1/2 teasp. chopped garlic
- 1/4 cup uncooked rice
- 4 cups chicken broth
Preparation
Step 1
Blanche tops of broccoli in boiling water for 3 mins. Drain and reserve
Chop stalks into 1/2 inch chunks. Heat oil , add garlic then broccoli chunks and rice. Cook 2 mins. then add broth and simmer until tender.
