    C flour (use 1/3 of it as WW pastry)

    tsp cinnamon

    tsp baking soda

  • 1

    tsp salt

  • 3/4

    tsp baking powder

  • 1

    tsp lemon extract (or 1 T grated peel)

    C grated unpeeled zucchini

  • 4

    oz chopped nuts

  • 1

    C raisins

  • 3/4

    C sugar

  • 1/2

    C Sugar Twin

  • 1/2

    C appleasuce

  • 1/2

    C oil

  • 4

    Egg Beater eggs (or 4 whole or 2 whole and 3 whites)

Directions

1. Heat oven to 350; spray 2 loaf pans 2. Mix flour, cinnamon, salt, soda, baking powder in a bowl; set aside 3. Combine sugar, oil, applesauce, eggs, extract and beat until smooth 4. Add dry ingredients and mix well 5. Add zucchini, nuts, raisins and stir to mix 6. Bake 60 - 75 min till pick clean; col 10 min and remove
