Curried Chicken Salad

Ingredients

  • Dressing:
  • 4 skinless chicken breasts - cooked, cubed and cooled
  • 6-8 stalks celery (usually from the heart), diced
  • 1-2 bunches green onions, chopped
  • 1 bag Craisins
  • 1/2 C slivered almonds (can use cashews or pistachios)
  • 1 1/2 -2 C mayonaisse
  • 1/4 C red wine vinegar (more to your taste)
  • 1-2 Tbsp curry powder (again to your taste)
  • salt and pepper to taste
  • 1 packet sugar or Splenda

Preparation

Step 1

Mix dressing ingredients together and then incorporate into other ingredients.

Chill for at least an hour (overnight really brings out the flavors)

Serve on croissants or on a bed of greens with a fruit salad
