Ingredients
- 1/4 c olive oil
- 2 lbs boneless diced lean pork
- salt & pepper
- 1 tsp Italian seasoning
- 1/4 c butter
- 4 garlic cloves, pressed
- 2 1/2 c mushrooms
- 1 zucchini, large, sliced
- 1 onion, large chopped
- 1/4 c parsley, chopped
- 2 leaves oregano, chopped
Preparation
Step 1
Heat olive oil in frying pan on medium high heat. Add pork and cook until brown. Season with salt, pepper and Italian seasoning. Put meat into saucepan. Drain oil from frying pan. Melt butter in frying pan. Add vegetables, parsley and oregano and saute for a few minutes. Do not overcook. Add vegetables to the meat and simmer together for 5 minutes. Serve with the pilaff which has been cooking while the meat and vegetables were being prepared.
