Ingredients
- gr. 340 pasta – Fusilli, Bowtie or Penne Rigate are always good but you can substitute whichever you like.
- 6 mature roma tomatoes
- 10 basil leaves
- 1 mozzarella - 'Fior di Latte'
- salt & pepper
- 1 tsp oregano
Preparation
Step 1
Cut the mozzarella into small pieces and place in a dish with the oregano, and the basil cut into thin slices. Add sat & pepper to taste and addthe tomatoes that have been cut into cubes, removing the seeds where possible.
Mix well and cover with plastic wrap and leave in the fridge.
Cook the pasta 'al dente' in lots of salty water. Leave to cool for about 5mins, then add the tomato/mozzarella mixture. Mix well & add 5-6 tablespoons of olive oil. Mix well.
Important – Don't rinse the pasta with cold water as it will lose all of it's taste!!!
Also a great dish with wholemeal pasta.
