Pecan-Crusted Chicken and Shrimp

Ingredients
- BREADING:
- 4 (8oz) chicken breasts
- 1 lb. shrimp, peeled w/ tails on
- 1 c. buttermilk
- 3 eggs
- 3/4 c. flour
- 3/4 c. cornmeal
- 2 tsp. salt
- 2 tsp. pepper
- 1 tbsp. paprika
- 1 tsp. dry mustard
- 1 3/4 c. pecans, ground
- 5 tbsp. butter
- HONEY-MUSTARD SAUCE:
- 1/2 c. dijon mustard
- 1/2 c. honey

Step 1
Beat the eggs together w/ buttermilk w/ fork till pale yellow. Grind pecans in food processor. Place in bowl w/ flour, cornmeal, s&p, paprika, and dry mustard.
With finger tips, dip chicken in the egg/milk mixture, then press both sides into pecan mixture. Place on plate.
Repeat w/ shrimp. Melt butter in skillet on med-high heat. Cook chicken on both sides 3-4 mins. each side.
