Ingredients

  • 1 quart tomato -- chopped or sauce
  • 2 large onion -- chopped
  • 1 large red pepper -- chopped
  • 2 tablespoons flour
  • 8 cloves garlic -- minced
  • 4 sprigs parsley -- chopped
  • 2 bay leaf
  • 1/4 teaspoon thyme
  • salt and pepper -- to taste
  • 1 pound cod -- dry
  • 3 cups white wine -- for poaching

Preparation

Step 1

Soak cod for 3 days changing water 2 or 3 times a day

Melt 2 tablespoon olive oil over medium heat, saute' half garlic and
onions for 3 min. or till brown

Add tomatoes, bay leaves, parsley,thyme, salt, and pepper, simmer 1 1/2
hours

Drain and rinse the cod for the final time, Poach the cod in white
wine, and italian spices (350 for 25 Min)

Strain or puree sauce, keep warm

In a small sauce pan, melt 1 Tablespoon olive oil add flour, brown
lightly (3 min.), add to sauce

Place 1 tablespoon olive oil in skillet add remaining onion and garlic
saute' 3 minutes
Stir in red peppers, add to sauce, pour over fish , bake at 350 till
thoroughly heated
Serving Ideas : serve with palenta
