Jasmine Rice with Avocado, Mint & Black Sesame Seeds

Ingredients

  • 1 cup uncooked jasmine rice (or any other rice)
  • 1 avocado, diced
  • fresh mint, torn to little pieces
  • parsley, torn to little pieces
  • 2 tablespoons of black sesame seeds
  • 2 about 2 tablespoons extra virgin olive oil
  • salt & pepper
  • 1 tablespoon lemon juice

Preparation

Step 1

Boil rice in a saucepan with 1 1/2 cups of water with high flame. Once it boils and the water starts to rise, put the fire at the lowest and cover. Cook for about 15 minutes. Transfer to a bowl to cool when cooked.

Toast sesame seeds in a saucepan.

In a big bowl, mix rice, diced avocado, toasted sesame seeds, fresh mint & parsley leaves. Mix carefully so you don't squash the avocado.

In a small bowl, whisk extra virgin olive oil, lemon juice, salt & pepper. Adjust the taste according to your liking.
