Ingredients
- Meat:
- 4 lbs. or more lean brisket
- Sliced onions
- Sauce:
- 3 lg. onions, diced
- 2 (or more) cloves garlic, minced
- Combine and add
- 1/2 c. vinegar
- 1 c. catsup
- 1 tsp. dry mustard
- 6 tsp. brown sugar
- 2 cans beef stock
- 2 tsp. worchestershire
Preparation
Step 1
Roast meat covered with sliced onions at 325 for 3-4 hours, depending on size (don't cook completely, it will slice better and you complete cooking later anyway). Cool, wrap in foil and refrigerate.
Sauce:
Saute the onions and garlic in pan until soft. Combine all the other ingredients and add to onions. Simmer 1 hour or until thickened.
Slice cold meat. Pour a small amount of the sauce in a roaster. Arrange meat slices in sauce and pour rest of sauce over.
Do that ahead - flavors will meld.
Reheat in oven to serve
