Verlette's Banana Cream Pie

I got this recipe many years ago from my dear friend Mary Jo's mom Verlette. I garantee you will enjoy the pie filled with lots of bananas and a creamy pudding mixture. I have a feeling this recipe could become one of your favorite recipes-so full of homemade goodness. This recipe is so easy as you make it using the microwave rather than cooking the filling on the stove. It's quick, easy, and oh soooo good!!!
Ingredients
- 2 cups milk
- 2/3 cup sugar
- 1 Tbs cornstarch
- 2 eggs
- 1/4 cup flour
- 4 bananas
- 1/4 cup butter
- 1 tsp vanilla

Step 1
1. In a microwave bowl, first beat eggs; whisk in milk. Add the sugar, cornstarch, and flour. Mix well. Cook in the microwave on high for 2 minutes. Remove and stir with the whisk. Put back in microwave and continue to cook for about 2 more minutes. Remove, stir well with whisk. Return to microwave and continue cooking until mixture starts to thicken. When mixture is a creamy thickened mixture, remove from microwave and stir in 1/4 cup butter and 1 tsp. vanilla. Mix well. Slice a banana on the bottom of a prebaked pie shell. Pour half the pudding mixture over the bananas. Slice 1 or 2 more bananas over filling; pour remaining cooked mixture over bananas. Chill until serving time. Garnish with whipped cream of Cool Whip on top. May use a prebaked cooled pie crust, a graham cracker crust or a pre-packaged shortbread crust.
