Ingredients
- 1 1/2 lbs. ground beef
- 1 c. chopped fresh mushrooms
- 1 med. onion, finely chopped
- 1 sm. carrot, finely chopped
- 1 clove garlic, minced
- 1/4 c. dry red wine or beef broth
- 1/8 tsp. cayenne pepper
- 2 c. shredded mozzarella
- 1 egg, lightly beaten
- 5 tbsp. grated parm
- 1 jar (1lb.10oz) pasta sauce
- 12 oz. lasagna noodles, cooked & drained

Step 1
Preheat oven to 350. In 12" skillet, brown ground beef over med. heat; drain. Stir in mushrooms, onion, carrot, and garlic; cook, stirring occasionally, till veggies are tender. Stir in wine and cayenne pepper; cook 3 mins. Remove from heat; let stand 10 mins.
In med. bowl, thoroughly combine ground beef mixture, mozzarella cheese, egg, and 2 tbsp. of parm cheese. In 13x9 pan, evenly pour 2 c. pasta sauce. Evenly spread 1/3 c. ground beef filling over each lasagna noodle. Carefully roll up noodles. Place, seam side down, in baking dish. Evenly spread remaining sauce over lasagna rolls. Bake covered for 40 mins. Sprinkle w/ remaining 3 tbsp. parm cheese and bake uncovered 5 mins. or till bubbly.
