Ingredients
- For the base:
- 250 gms plain flour
- 125 gms sugar
- 125 gms butter
- 1 egg plus one yolk
- pinch of salt
- Mascarpone cream:
- 250 gms mascarpone cheese
- 3 eggs
- 3 tblsp sugar
- lemon rind

Step 1
Base:
Mound the flour onto a board, making a well in the middle. Add softened butter and quickly work it into the flour. Add the other ingredients and knead it quickly forming a ball. Place into the fridge for 2 hours.
Mascarpone cream:
Beat the egg yolks with the sugar until foamy. Add the mascarpone and continue stiring. Beat the egg whites until stiff and fold through the mascarpone mix. Cover well and place in the fridge.
Roll out the pastry on a sheet of oven paper and place into a deep sided pie dish. Cook in the oven at 200deg. for 15 mins. Remove from oven then allow to cool. Cover base with the cream mix then, beginning from the edge, place a layer of cut strawberries. If you deisre, grate some dark chocolate over the top.
