Dessert - Crema Pasticcera

Ingredients

  • 1/2 lt of milk
  • 80 grams of flour
  • 80 grams of granulated sugar
  • 3 egg yokes
  • pinch of salt
  • 1 lemon peel – grated

Preparation

Step 1

Scald the milk. In a deep pan beat together the egg yokes and sugar for 5 minutes until you have a frothy mixture. Add the flour and a pinch of salt. Beat together. Slowly add the scalded milk to the mixture mixing with a wooden spoon. Place over a low flame stirring continuously. As soon as it starts to boil (around 10 minutes) remove from the heat. Let it cool at room temperature.

This cream is a base for various types of tarts.
