The BEST Breakfast Sandwich

Ingredients

  • 1 egg
  • Handful of baby spinach
  • 1 tsp dijon
  • 1 tsp hot sauce
  • 1 piece of Canadian bacon
  • 1 whole grain or whole wheat English muffin
  • 1/2 piece of sharp cheddar cheese
  • salt and pepper

Preparation

Step 1

Cook the egg according to your taste. I like to make it sunnyside up and then fold it over at the end of cooking. It works well to heat the Canadian bacon at the same time as you cook the egg as they only take a minute or two to warm through. Sprinkle the cooked egg with salt and pepper. Toast the English muffin. Mix the dijon and hot sauce (Feel free to adjust the ratio according to your taste.) Spread the mix on one side of the English muffin. Top with the spinach, canadian bacon, egg and then cheese…Enjoy!

Kid Tip:
Kids are not typically fans of over easy eggs, so you can easily make this with a scrambled egg. Scramble the spinach right into the egg and leave out the hot sauce.
