Meatloaf

Ingredients

  • 3/4 cup saltine crackers (crumbled finely)
  • 2/3 cup milk
  • 1 1/2 lbs ground beef
  • 1/4 cup catsup
  • 2 eggs, beaten
  • 1/4 cup chopped onion
  • 2 tblsp minced parsley
  • 1 teasp salt
  • dash of pepper
  • Glaze
  • 1/4 cup ketchup
  • 2 tblsp brown sugar
  • 2 tblsp worchestershire sauce or 1 tblsp mustard
  • 1/2 pkg bacon

Preparation

Step 1

Preheat oven to 350 degrees.
Soak cracker crumbs in milk.
Add ground beef, catsup, eggs, onion, parsley, salt & pepper.
Mix all ingredients well (mixing with hands works best)
Shape into ovel loaf & place in sprayed shallow baking pan. (cake pan works well) Set aside while making topping.
Mix together ketchup, brown sugar & worchestershire sauce or mustard.
Spread 1/2 of glaze on meatloaf then top with slices of bacon. Spread remaining 1/2 of glaze over bacon.
Bake 30-45 minutes.
