Jalapeno Shrimp Cakes with Key Lime Sauce

Ingredients

  • # Lime Sauce:
  • # 1/2 cup sour cream
  • # 1 tablespoon Key lime juice
  • # 2 tablespoons chopped cilantro
  • # 1/4 teaspoon salt

  • # 2 slices firm white bread, torn into small pieces
  • # 1 lb purchased package of pre-cooked small salad shrimp
  • # 2 tablespoons green onion, chopped
  • # 1 tablespoon chopped dill weed
  • # 3 tablespoons minced green bell pepper
  • # 2 eggs
  • # 1 1/2 teaspoons Worcestershire sauce
  • # 2 tablespoon jalapeno pepper, seeded and chopped finely
  • # 1 teaspoon paprika
  • # 1 teaspoon salt
  • # 1/2 teaspoon ground pepper
  • # 1/2 cup fresh bread crumbs
  • # 4 tablespoons extra virgin olive oil

Preparation

Step 1

In a small mixing bowl, whisk sour cream, key lime juice, cilantro and salt until smooth. Set aside. In a large mixing bowl, place the following ingredients: white bread, shrimp, green onions, dill weed, green pepper, eggs, Worcestershire sauce, jalapeno pepper, paprika, salt and pepper. Blend mixture together and shape into 6 patties, 3/4 inch thick. Place bread crumbs in a shallow container, coat patties on both sides and put patties on a dish, cover with wax paper and chill for 15 minutes. Using a large, heavy skillet, heat olive oil over medium heat. Cook patties 3 to 4 minutes each side. Remove from heat put patties on plate and drizzle with Key lime cilantro sauce.
