Brie Bites

(Other than opening a bag of Doritos) these are the easiest and most versatile appetizers in the history of appetizers. (IMHO)

Ingredients
- 2 packages of mini phyllo shells
- 8 oz brie cheese, double cream
- Raspberry, pineapple, or apricot preserves or cranberry sauce or lemon curd
- Optional: Pecan or Macadamia Nut

Preparation
Step 1
Preheat the oven to 350°.
Place the mini shells on a baking sheet coated with cooking spray. (Or line with parchment...suggested.) Carefully cut the rind off of the brie.
Cut the brie into 1/2 inch cubes and put one into each shell.
Top each brie bite with preserves (and nuts if you like).
Bake in the oven for 6-7 minutes or until the brie has melted and the phyllo shells are golden brown.
Optional:
If using raspberry or cranberry: Top with a pecan half.
If using pineapple or apricot: Top with a macadamia nut for Hawai'ian flair.
