Ingredients

  • 2

    packages of mini phyllo shells

  • 8

    oz brie cheese, double cream

  • Raspberry, pineapple, or apricot preserves or cranberry sauce or lemon curd

  • Optional: Pecan or Macadamia Nut

Directions

Preheat the oven to 350°. Place the mini shells on a baking sheet coated with cooking spray. (Or line with parchment...suggested.) Carefully cut the rind off of the brie. Cut the brie into 1/2 inch cubes and put one into each shell. Top each brie bite with preserves (and nuts if you like). Bake in the oven for 6-7 minutes or until the brie has melted and the phyllo shells are golden brown. Optional: If using raspberry or cranberry: Top with a pecan half. If using pineapple or apricot: Top with a macadamia nut for Hawai'ian flair.
