Ingredients

  • 1/2 teaspoon baking soda
  • 1/4 cup buttermilk
  • 1/4 cup vegetable shortening
  • 3/4 cup sugar
  • 1 egg
  • 2/3 cup bananas (2 medium) mashed
  • 2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cups nuts

Preparation

Step 1

Preheat your oven and well greased cast iron loaf pan to 350 degrees.

Add the baking soda to the buttermilk in a measuring cup and let it stand.

In a large bowl, combine the shortening and sugar, beating it until fluffy. Add the egg and bananas. Beat until mixed.

In a small bowl, combine the flour, baking powder, and salt. Add the dry ingredients and buttermilk mixture alternately to the shortening, sugar, egg, and banana mixture. Stir in the nuts.

Carefully pour the batter into the preheated and greased loaf pan and bake at 350 degrees for 55 to 60 minutes or until bread tests done - a toothpick inserted into the center comes out clean.

Remove from the oven and place on wire rack until cooled.
