Stuffed Pork Tenderloin

Ingredients

  • 1 1/2 lbs pork tenderloin
  • 3 cloves garlic minced
  • 1/2 onion cut into chunks
  • 1/2 cup loosely packed fresh cilantro
  • 1 cup mushrooms
  • 1 cup feta cheese
  • 2 cups loosely packed spinach leaves; chopped
  • 2 tbsp olive oil
  • 1/2 cup bread crumbs

Preparation

Step 1

Preheat oven to 400 degrees
Filet out tenderloin
Open; lay flat between two pieces of waxed paper
Pound with meat mallet or rolling pin to 1/2in thickness
Place garlic, onion, cilantro, spinach, lime juice and jalapenos in food processor or blender container, cover
Process until coarsely chopped.
Process while slowly adding olive oil, for 10-15 sec or until mixture is slightly smooth.
Add breadcrumbs and feta cheese to cilantro mixture and mushrooms spread over tenderloin, Roll up and secure with string.
If you have any mixture left over spread into bottom of the pan and lay the tenderloin on top.
Bake for 55-60 min or until internal temp is 170 degrees is reached.
Cool for 5 minutes
