Ingredients
- 1 lb fresh green beans, washed and snapped
- 1 shallot, sliced into rings or chopped
- 1 pint sliced mushrooms
- 1 T extra virgin olive oil
- 1 T unsalted butter
- 2 T fat free, reduced sodium chicken broth
- salt & pepper to taste

Preparation
Step 1
Wash green beans, snap ends.
Blanch in boiling salted water for 5 minutes, remove and drain.
In large saute pan, add extra virgin olive oil, heat, add mushrooms and shallots, saute 5 minutes on medium/high heat to brown up and carmelize a bit.
Add green beans and chicken stock, turn heat to medium until stock reduced by half, about a minute.
Add butter and salt and pepper, turn to coat green beans in the "sauce". Serve immediately.
