Ingredients
- 1 package dry yeast
- 1/2 cup warm water
- 5 cups all purpose flour
- 1/4 cup sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 stick butter, cold
- 1/2 cup shortening
- 2 cups buttermilk*
- buttermilk can be made by measuring 2 tblsp white vinegar into a 2 cup liquid measuring cup and adding whole milk to make to cups.

Step 1
In a small bowl dissolve the yeast in the 1/2 cup warm water and let stand for about 5 minutes. To measure the flour, lightly spoon flour into dry ingredient measuring cup and level with a spatula. Combine the flour and next four ingredients in a large bowl. Cut in the butter and shortening with a pastry cutter or knife until it resembles coarse meal. Add the yeast mixture and buttermilk to the flour mixture; stir just until moist. Cover the dough and chill 1 hour. Preheat oven to 450 degrees. Turn the dough out onto a floured surface and knead lightly 3 or 4 times. Roll dough to 3/4 inch thickness and cut with a 2 1/2 inch biscuit cutter. Place the biscuits on a baking sheet that has been sprayed with cooking spray. Brush melted butter over the top of the bisuits. Bake at 450 degrees for 12-15 minutes or until golden brown.
