Brown Sugar Apple Pie

Ingredients
- 2 Tbs. unsalted butter
- 2 lbs. Jonagold, Ida Red , or golden delicious apples
- (about 4 large, peeled and sliced 1/2" thick)
- 2 lb. Granny Smith apples
- 3/4 C. brown sugar + 1 Tbs. firmly packed dark brown sugar
- 1 Tbs cornstarch
- 1 C. pecans, broken into pieces
- 1 tsp pure vanilla
- 2 pie crusts
- 2 large eggs beaten
- 1 Tbs. sugar
- 1/4 tsp salt

Step 1
Melt butter in large straight sided skillet over med-high heat. Add pples and 3/4 C. brown sugar and cook , tossing occassionally, until just tender, 8-10 mins. In a small bowl, combine cornstarch and remaining brown sugar. Sprinkle over apples and cook unitl thickened, about 1 min. Remove from heat, add pecans and vanilla and toss to combine. Let cool , tossing occassionally to room temp; about 40 mins. Heat oven to 375. Make fancy cutouts on the crust of you would like. Put botto m crust in pie pan, trimming edges. Spoon cooled filling into the crust; top with top crust. Brush entire pie with egg and sprinkle on sugar and salt. Bake 50-55 mins.
