    c lukewarm water

  • 1 3/4

    oz cake yeast (1/3 c)

  • 5 3/4

    c bread flour

  • 1

    T dark brown sugar

  • 2

    T olive oil

  • 1

    T salt

Directions

Place water and yeast in mixing bowl and allow to bloom for about 5 min. Using a dough hook, add flour and sugar and mix on low speed until a dough starts to form. Drizzle oil and salt into dough and beat on med speed for 8-10 min or until a smooth, firm elastic dough is formed. Transfer to a lightly oiled bowl and spray dough with a thin coat of cooking spray. Wrap with plastic and set aside to proof for 1 1/2 hrs or until doubled in size. Remove wrap, punch down and flatten with heel of hand. Roll up tightly, should be elongated and oval-shaped. Preheat 425, use pizza stone or inverted cookie sheet. Set dough on sheet dusted with cornmeal, allow to proof covered with damp towel for 30 min. Place in oven and spray with water and cook 3 min, spray again and cook 3 min, spray again and bake 45 min. A hollow thud should be heard when whacked with a wooden spoon.
