Homemade Kettle Chips with Bacon Cheese Sauce

Ingredients
- 6 slices of bacon cut into 1/4 inch pieces
- 1/2 med onion, small diced
- 1 lb Hook's Cheddar cheese, grated
- Kennebec potatoes sliced as thin as possible, rinsed and dried
- Flour
- Salt and pepper, to taste

Preparation
Step 1
Heat oil in a heavy bottom pot to 200 degrees
Dunk potatoes in batches for 2 mins, remove and place in the fridge. Once all the potatoes are cooled, turn the oil up tp 350 degrees. Fry chips until crisp about 2 mins, then drain on paper towels and season with sea salt and cracked black pepper. Place on a serving platter.
Slowly render bacon in a heavy sauce pan over medium heat until crisp, do not burn fat.
Remove bacon and return fat to heat.
Add onion, cook until soft and season with salt and pepper.
Add flour, cook for 5 minutes
Add milk and cheese and simmer while stirring for 10 mins
Pour cheese sauce over chips, sprinkle with bacon and enjoy.
