Ingredients

  • 3 lbs of Chicken Breast
  • 2 Onions, Diced
  • 1 Red Pepper, Diced
  • 1 Green Pepper, Diced
  • 1 32 oz Can of diced tomatoes
  • 1 12 oz? Bottle of Franks Hot sauce
  • 1 Tbs of Mustard
  • 1 tbs of chili powder
  • 1 tsp of cayenne pepper
  • 1 tsp of crushed red pepper
  • 1 tsp of paprika
  • Salt
  • Pepper
  • Olive Oil
  • 1 16 oz can of cannellini beans
  • 1 Block of Blue cheese

Preparation

Step 1

Brush chicken with olive oil, salt, pepper, and cayenne pepper and bake, covered in the oven on 350 degrees for 20 mins or until cooked through.

Meanwhile, saute onions on medium low heat in olive oil in a big pot until they begin to brown. Add peppers, spices, and cook for 3 mins. Add tomatoes and simmer for 20 mins.

In a tupperware combine Franks hot sauce and mustard. Shred chicken and add to tupperware and shake.

Add chicken and white beans to chili and simmer for 10 more mins.

Serve with Blue cheese.
