Ingredients
- 2 tbsp vegetable stock
- 1 1/2 pounds red onions, peeled and sliced
- 2 tsp sugar
- 1 tsp coarse sea salt (optional)
- 1/2 tsp freshly ground pepper
- 3 tbsp sherry wine vinegar or to taste
Preparation
Step 1
Heat the stock in a large saucepan, add the onions, sugar, salt, and pepper. Cook over a low heat, covered, for 35 minutes, until the onions color slightly.
Add the vinegar and cook for 30 minutes, covered, over a low heat; the onions should be very soft. Adjust the seasoning and serve.
