Enchilada Pie

This is such a delicious, and quick meal from
Cooking Light magazine. I often add beans to make it a more filling and balanced meal.

Ingredients
- 1 pound ground sirloin
- 1 cup chopped onion
- 1 tbl butter
- 1 tbl minced garlic
- 1 1/2 tbl flour
- 1 c beef broth
- 1 tbl taco season
- 1 8 oz can t sauce
- 1/3 cup shredded cheese
- 4 (8 inch) whole grain tortillas

Preparation
Step 1
1. Heat large nonstick skillet over med high heat. Brown beef and onion.
2. Melt butter, in a saucepan and brown garlic for 1 minute. Sprinkle with flour cook 30 seconds stirring constantly. Add broth, taco seasoning, and tomato sauce to pan. Bring to boil and cook 2 minutes.
3. Add 1 ½ c tomato mix to beef.
4. Layer whole wheat tortillas with beef mix. Top with reserve t sauce. Sprinkle with cheese. Bake 10 min at 350 until cheese is melted
