Spaghetti Carbonara

Good comfort food. Most of the ingredients are right in the pantry.

Ingredients

  • Olive Oil
  • 3 cloves garlic
  • 2 slices pancetta (1/4 inch thick) – diced small
  • 1 medium onion (diced small)
  • 1 can chicken broth
  • 1 stick butter
  • 2 eggs beaten
  • 1/4 - 1/2 lb pecorino romano or locatelli cheese, grated
  • Pepper to taste
  • Spaghetti (2 lbs)

Preparation

Step 1

1. Add a little olive oil to a large sauté pan. Add garlic; remove once brown. Cook onion until it dissolves. Brown pancetta.
2. Add chicken broth, butter, and pepper. Cook for about 15 minutes.
3. Cook (al dente) and drain. Leave in pot.
4. Add eggs and cheese and toss quickly with spaghetti for 1 minute. Add chicken broth mixture. Place in platter and serve
