Thai Chicken Stirfry with Spicy Peanut Sauce

Ingredients

  • 2 whole chicken breasts in bite sized pieces
  • 1/2 cup light peanut butter
  • 1/2 cup water
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil
  • 2-3 cloves minced garlic
  • 1/2 tsp chillies
  • 3-4 cups sliced broccoli

Preparation

Step 1

Blend peanut butter and water, soy sauce & sugar in small bowl.

Heat oil in wok/skillet over high heat.
Add garlic & chillies and stir fry 30 seconds.
Add chicken & stir fry until cooked.
Add broccoli & sauce. Stir fry about 3 minutes.
