Ingredients
- 4 sweet potatoes
- 1/3 cup fresh orange juice
- 1 1/2 tablespoons grated peeled fresh ginger
- 1 teaspoon grated orange rind
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Preparation
Step 1
Pierce sweet potatoes with a fork. Microwave at HIGH 10 to 12 minutes or until tender, turning over halfway through. Peel, cut into large chunks, and process in a food processor with orange juice, ginger, and orange rind until smooth. Stir in salt and pepper.
