Western Omelet

Ingredients

  • 1 32-oz. bag frozen hash brown potatoes
  • 8-10 oz. lean ham, cubed
  • 1 med. onion, chopped
  • 3 C. shredded cheddar cheese
  • 12-14 eggs
  • 1 1/4 C. milk
  • 1 1/2 tsp. salt, to taste
  • 1 tsp. pepper, to taste

Directions

Use a 4-5 quart crock-pot. Layer in the following order: 1/3 each of hash browns, ham, onion and cheese. Repeat layers 2 times. Beat together milk, eggs, salt & pepper. Pour over the layers in the crock-pot Cover and cook on low for 8-9 hours.
