Ingredients

  • 8 boneless skinless chicken thighs
  • 1 1/2 lbs. boneless skinless chicken breast halves
  • 1/2 c. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 tbsp. olive oil
  • 1 can chicken broth
  • 1 can diced tomatoes, undrained
  • 1 c. sliced fresh mushrooms
  • 1 med. onion, chopped
  • 1 pkg. sliced prosciutto or deli ham, chopped
  • 1 tbsp. diced pimientos
  • 1 tsp. minced garlic
  • 1/2 tsp. Italian seasoning
  • hot cooked linguine
  • grated parm cheese

Step 1

Cut chicken into serving size pieces. In large resealable plastic bag, combine the flour, s&p. Add chicken, a few at a time, to coat.

In large skillet, brown chicken in oil in batches. Transfer to slow cooker.

Stir in broth, tomatoes, mushrooms, onion, prosciutto, pimientos, garlic, and Italian seasoning. Cover and cook on LOW 4-4 1/2 hrs. or till chicken is no longer pink. Serve w/ slotted spoon over linguine; sprinkle w/ parm cheese.
