Sour Cream and Onion Dip

Ingredients
- 2 tablespoon Olive Oil
- 1 large Yellow Onion (cut into even 1/4-inch thick rings)
- 1 clove Garlic (minced)
- 1 1/2 cup Sour Cream
- 3/4 cup Mayonnaise
- Kosher Salt
- Pepper

Step 1
Heat the olive oil in a sauté pan over medium heat. Add the onion, and season with a large pinch of salt, then toss to coat in oil.
Arrange the onion into an even layer in the pan, and cook stirring occasionally, but retaining an even layer. Cook until the onions caramelize, about 10-15 minutes. Remove from heat and stir in the garlic.
Combine remaining ingredients in a food processor. Add the onions, garlic, and season with black pepper. Pulse until thoroughly combined, then transfer to the refrigerator. Serve chilled.
