Chocolate Sandwich Cookies

Ingredients

  • Filling:
  • 1/3 c. butter softened
  • 1/2 c. sugar
  • 1/2 c. firmly packed brown sugar
  • 1 large egg
  • 1 3/4 c. flour
  • 3/4 c. cocoa powder
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 Tbsp. milk
  • 1 tsp. vanilla
  • 1 (3 oz) cream cheese softened
  • 1/4 c. butter softened
  • 1 1/2 c. powdered sugar
  • (may need to double??)

Preparation

Step 1

Heat oven to 350. Line 2 baking sheets with parchment.

In large bowl beat butter and sugars at medium speed with electric mixer until creamy. Add egg, beating until combined.

In small bowl combine flour, cocoa, baking soda and salt. Alternately add flour mixture and milk, beginning and ending with flour mixture, beating just until combined. Stir in vanilla.

Roll dough into 1" balls; place 2" apart on baking sheets. Bake for 12-14 min or until edges are lightly browned. Let cool on pans for 5 min. Remove to wire racks to cool completely. Spread cream cheese filling evenly over flat side of half of cookies; put cookies together. Can sprinkle with powdered sugar when done.

Filling:
Combine cream cheese and butter. Beat until creamy. Gradually add powdered sugar until smooth.
