Chicken Cobbler

Ingredients

  • 2 c. diced, cooked chicken
  • 1 c. cooked rice
  • 2 c. chicken broth
  • 1/4 c. butter
  • 1 c. plain flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1 c. milk

DIRECTIONS
Mix first 3 ingredients and set aside. Put butter in
1 1/2 quart round casserole and put in a 350 F oven until melted. Meanwhile, mix remainging ingredients. Pour into casserole of melted butter. Do not stir. Spoon chicken mixture into the center.Do not stire. Bake 50 minutes. Let stand 5 minutes before serving. Serves 6.


Sometimes my mother would add green peas, broccoli or mixed vegetables to the chicken mixture for color and taste.
