WILD RICE SOUP

Ingredients

  • 1 medium onion
  • 2 celery ribs, diced
  • 2 carrots, diced
  • 1/2 cup margarine
  • 1/2 cup flour
  • 4 cups chicken broth
  • 2 cups cooked wild rice
  • 2 cups evaporated skim milk
  • 2 cups cooked chicken
  • 1 teaspoon dried parsley flakes
  • 1/2 teaspoons salt
  • 1/4 teaspoon pepper

Preparation

Step 1

In large kettle, sauté onion, celery and carrots in margarine until onion is transparent. Reduce heat, blend in flour. Cook until bubbly. Gradually add broth, stir consistently, bring to a boil. Boil for one minute. Reduce heat, add rice, milk, chicken, parsley, salt and pepper.

Simmer 20 minutes. Makes 8-10 1-cup servings.
