Pork chops with Braised Red Cabbage

Ingredients
- 3 Tbsp. olive oil
- 4 sm. bonein pork chops(about 1 inch thick)
- 1 tsp. ground cumin
- Kosher salt
- pepper
- 1 red onion,sliced
- 1/2 small head red cabbage(about 1 lb.),thinly sliced(about 6 cups)
- 1/4 c. red wine vinegar
- 1/4 c. fresh dil sprigs

Preparation
Step 1
Heat 1 Tbsp. oil in a lg. skillet over med. heat
Season the pork with the cumin
1/2 tsp salt and 1/4 tsp. pepper,and cook until browned and cooked through,6-8 mins. per side.
Meanwhile heat the remaining 2 Tbsp. oil in a second skillet over med. heat.
Add the onion and cook,covered,stirring occassionally,for 5 mins.
Add the cabbage,vinegar,2 Tbsp. water,3/4 tsp. salt and 1/4 tsp. pepper, and cook,covered stirring occassionally,until the cabbage is just tender,5-6 mins.
Fold in the dill and serve with the pork.
PREP TIP:
May use boneless chops.
Make this dish sweeter by adding one Braeburn apple(cut into 1/2 in. pieces to the skillet with the cabbage.
