Ingredients
- 2 tsp grated lime zest
- 2 tbls. fresh lime juice
- 2 tbls vegan butter
- 1 tbls veg oil
- 1 tsp sugar
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 2 medium tomatos , diced
- 4 scallions, chopped
- 1/2 cup fresh cilantro (can substitute parsley)
Preparation
Step 1
Whisk together lime zest and lime juice, butter, oil, sugar, in a large bowl (add ssalt and pepper to taste)
Cook quinoa according to directions.
Add cooked quinoa to dressing already prepared, toss until dressing is fully absorbed. Stir in remaining ingredients.
