Quinoa - Black Bean and Tomato

Ingredients

  • 2 tsp grated lime zest
  • 2 tbls. fresh lime juice
  • 2 tbls vegan butter
  • 1 tbls veg oil
  • 1 tsp sugar
  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 2 medium tomatos , diced
  • 4 scallions, chopped
  • 1/2 cup fresh cilantro (can substitute parsley)

Preparation

Step 1

Whisk together lime zest and lime juice, butter, oil, sugar, in a large bowl (add ssalt and pepper to taste)

Cook quinoa according to directions.

Add cooked quinoa to dressing already prepared, toss until dressing is fully absorbed. Stir in remaining ingredients.
