Ingredients
- 1 lb. lean ground beef
- 1 cup water
- 1 can (16 oz.) kidney beans, rinsed and drained
- 1 jar (16 oz.) salsa
- 1 cup (4 oz.) shredded Monterey Jack cheese
- 4 (6") tortillas
- 1 pkg. taco seasoning mix
Preparation
Step 1
Heat oven to 400 degrees. Brown beef. Drain. Stir in seasoning mix, water. Heat to boiling, stirring occasionally. Reduce heat to medium high. Simmer, uncovered for 4 minutes, stirring occasionally. Add kidney beans. Heat until hot. In ungreased 2 quart casserole, place 1 tortilla. Layer with 1/4 of the salsa, beef mixture and cheese. Repeat layers, using up ingredients and ending with cheese. Cover and bake 17 to 22 minutes or until cheese is melted . Let stand 5 minutes.
