Peppers & Squash

Ingredients

  • 1 tbs olive oil
  • 1 tbs butter
  • 1/2 of each red, yellow and gr. pepper, cut in strips
  • 1 zucchini, sliced
  • 2 patty pan squash, peeled and sliced
  • 1 yellow squash, sliced
  • 1 carrot, thinly sliced
  • 1 onion, sliced
  • 1 tomato cut in wedges

Preparation

Step 1

Stir fry veggies in oil and butter, starting with longer cooking veggies first. Cook just until crisp-tender.
