  • 1 lb. ground beef
  • 1 clove fresh garlic, minced
  • 1/2 tsp. cumin
  • 1 Tbs. red chili powder
  • 1/4 tsp. oregano
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup SPIKES' Medium Salsa
  • 2 Tbs. fresh cilantro, chopped
  • 1 can refried beans
  • Gluten free yellow corn tortillas
  • Vegetable oil, for frying
  • Shredded cheddar cheese
  • Shredded lettuce
  • Diced tomatoes

Step 1

Fry corn tortillas in vegetable oil until crisp. Place on paper towels to absorb oil. Set aside. Place ground beef in a pan and break up. Add garlic, cumin, chili powder, oregano, cayenne, salt and pepper. Cook until well browned then stir in cilantro and salsa. Heat beans in a small pan. Spread a thin layer of beans on tortilla. Then top with ground beef mixture and cheese. Bake at 350°F until cheese melts. Remove from oven and top with lettuce and tomatoes.
